Does anyone know if there is a detailed list of which hatred generators can critically hit (and which parts if the ability hits more than one target or more than one time)? My initial searches haven't revealed a recognizable thread to look at.

every time you hit a target there is a chance you get 1 disc with night stalker, that chance depends on the proc chance of your skill, the proc chances can be found here :

there are rarely any skills like energy twister for the DH most of them are clear how many times they hit, only caltrops arent but they have anyway 0% proc chance so you dont need to worry about the math.

Does this mean that the proc chance of the skill modifies the chance to critically hit, or something else?

Proc chance means the % chance of a proc occurring when that skill is the source of the proc.

You can combine the proc coefficient with your chance to get a proc, of course. If you've got 50% chance to crit on a skill that's got a 50% proc coefficient, then 25% of the time you'll trigger it. Most proc coefficients are notable on skills that do a lot of hit checks, like AoE attacks or whirlwinds or the like, so it's hard to get a real sense of them from the numbers, since the skill might be doing 50 hit checks in half a second. You kind of have to play with them and experiment to get a sense of how they work in practice.
