Then we have the oppressors that are hard for ranged charachters with their charge ability possibly one shotting some people.
Then we have the meteor spammers that are moving around like crazy covering the ground with meteors.
And lets not forget the 2 uniques before diablo. Iskatu and Raka-something. Harder than anything in act3.

Let's see what we have in act 3.
We have the heralds of pestilence. Predictable pools of poison. Easily avoided.
We have the tremors moving at slow speed. Hardly any threat just takes alot of damage to go down.
We have the winged moloks. Once they land they move about slowly. Predictable.
Every type of monster in act 3 does predictable damage. There is no instant ko like mallet lords and oppressors.
The only really tough monster is the larder boss.
while I could agree with your points you forget something important. Act 4 is much shorter and has much less elites, so you have less chance to find those really nasty affix combinations in elites or double packs that can kill you.

Act4 is harder than 3... but not by that much. Mallet Lords attack once per 5 seconds. They are the last things you should complain about. Oppressors hurt like hell... but then so do fallen maniacs or damage shield boosted fireballs. Ghom > all of act 4, no contest.

Act3 meanwhile has the heralds who stagger their fast moving attacks that will clip you a few times even if you are already moving out of the way, tremors moving at light speed (rofl slow) after turning red, moloks that are one of the harder hitting enemies in the game...

Act4 really just takes act3, then adds about 10%, if that.

Act 1 > Act 2 = doubled it, at least.
Act 2 > Act 3 = doubled it, at least.
    Act 3 > Act 4 = minor increase.

The upcoming changes to difficulty might help you. I think it will help a lot of people, whatever it is.

Why bother with the larder boss? Just start on a quest after him and he won't be there. But if you like tormenting yourself be my guest.
As for the rest.. Let's just agree to disagree.

You do have to fight him once though. Just as you do Rakanoth and Iskatu. The point stands.

Larder was nerfed and much easier to manage now.

Actually, I recommend a public game for moving on and progressing. Many people are playing their main characters and getting paragon lvls so now it is a good time to get progress.

Correct. But you can just kill him with a group. And you are right the jump from act 1 > act 2 and act 2 > act 3 are significantly harder than act 3 > act 4.

The same logic applies to any boss though.
