E: I worked out those from a spreadsheet.Quick question:
If I have 1000Dex, which of these does more damage (and by how much)?
870dps weapon 1.2as
570dps weapon 1.33as 180 Dex
613dps weapon 1.48as 100 Dex
Does the DPS already take the AS and extra stat into account?!?! How does this work :/

+200-300 Poison Damage
Is that already included in the white xxx-xxx Damage number directly beneath the DPS number?

There's a formula for dual wielding and a formula for single. Both use the average weapon damage (the sum of the xxx-xxx/2), not the final DPS. The DPS number is a summation of all the IAS, + elemental damage, + % damage, etc. put into an easy to read number. So if I find a Heaven Hand, it's going to have a range from like 150-200 damage, and its DPS will be around 250 (since 1.4 APS) unless it has modifiers that are adding elemental damage, IAS, + % damage. With modifiers like these on a weapon, the final DPS value will increase to reflect the bonus damage and increased attack speed.
