This might seem an obvious question, so please excuse me if it is...
If I have 4 JoE in a bow, 3/4 in armour, 3 in a helm - do I get 200/220 damage over 2 seconds, or does it calculate in some weird way? Something about it is bugging me.

my understanding is that if the times on all the items are the same, you just add them, yes .. weirdness starts when you pick up say 50 over 5 charm.... but reality check - does everything die from one shot through majority of a1? if yes, you are doing it right
btw, out of curiosity, why not 5 os longbow?
On different items (including jewels) the rate (damage per sec) is added and the duration averaged. In this case since the duration is 2 seconds for every item you can just add the damages and get to 200/220 over 2 seconds.
Weird stuff does happen in some cases, which you can read about here if you really want to ;D
Poison damage is actually a damage rate per frame and a number of frames duration. The game display multiplies the rate by the duration (and rounds it) to give the total damage done over the duration. But since all calculations are done with the rate (and remember the internal damage unit is 1/256), multiple poison sources have their rates added to give a total damage per frame, then the durations are averaged (and I would suspected rounded down to the nearest whole frame like everything else in D2). The only exception is Venom, which sets the duration at 10 frames.
By the by, if you want to see an example of the rounding I'm talking about, stick 3 Tals in a bow. It will say 226 damage over 5 seconds, rather than the 225 you might expect.
But in short, yes, if you stick 11 envy jewels in your equipment (5 in a long bow, 3 in a mask, and 3 in a breast plate is what I roll with), you'll get 220 damage over 2 seconds.
where can i find a 5os long bow? thats currently what i want but with no luck

Socketed items that drop in NM are limited to 4, so the item needs to be drop in Hell if you don't socket it yourself. For Larzuk/cube socketing you also need to look at the ilvl where it gets 5 sockets (which is 41, like everything else), so if you socket it yourself you can get the base anywhere past NM Jail lvl 1. Obviously higher level monsters can drop higher qlvl items so it'll drop more often in earlier areas. As for the actual area to run...
I would try NM cows. At least for me, cows overall tend to drop crap bases, so that would be my first stop for obscure socketables like that ...
