    So is crit stacking better than IAS now?

    I've been out of the loop for a while. I'm assuming IAS is out and crit chance/crit damage is in?

    Pretty much. You still need some ias to generate Spirit effectively, and you should have at least one item with some Life/spirit spent, but in general crit chance is very effective with monks considering skills which take advantage of crits, mostly Cyclone, and Thunderclap scoring multiple crits. Deadly Reach, Quickening, Crippling Wave (maybe? not sure if anyone has tried with crits), and WotHF Blazing Fists are all nice too.

    Shame they don't have any way of actually increasing their crit chance from skill, like a passive or something, as opposed to the barb which has like 5 different skills to do so... :(

    It's more the new hype thing to do than the better thing to do. It's good with some good skill, it"s pretty meh with very viable skills.

    High crit with Sweeping Wind: Cyclone is very popular at the moment for just how much damage it can deal, but IAS is still important for spirit generation, as SVS mentioned above, and for increase the speed that you heal from LoH. It is still a pretty important stat and even in crit heavy builds they value IAS on rings pretty high since rings have very low crit % values.
