Tips which work for me:
When I want to buy something to resell, I just set the Max Buyout to the value I want to sell it for. This way I can quickly find underpriced items. And I only search for rares, and I only check the first page of the search results.
For my monk I usually search for:
-All Res
-Dex
-Vita
-IAS
-Life on hit
-Life regen

RE: socketing items prior to listing: I may be thinking about it wrong, but I would think if you socket something into the item it might get seen, because the AH adds values together. It's cheap to unsocket so it shouldn't be an issue on the buyer's end. For example:
If your armor only has 48 vitality, and people screen by 50 or 75vitality, it will be filtered out. But if you pop in a +34 vitality gem, the AH will treat the item as having 82 vitality and put it in those searches.
From what I have seen all gems do get accounted when using the search with 1 exception - when you put a ruby ( +damage ) on a weapon the stats on the weapon are NOT included in - so if you buy a weapon on the AH with 250 dps with a +30 damage gem you will actually get a 280 dps weapon to your stash after buying. So I advise not to gem your weapon with +damage before you put it on sale.
Interestingly enough, although the DPS doesn't actually show in the listing, when you sort by DPS, the weapons are ranked according to their final DPS, not what is listed on the screen. For weapons, which most people sort for by DPS, it may still be useful to put a +damage gem in the weapon.
I have been having very bad luck at the AH and I feel like I am following the steps needed. For example currently I have a pair of pants which have:
Prime State (can't rememer) : 80ish
Vitality: 80ish
Resist All: 45ish
2 Sockets
And one other random ability. I looked up 2sockets, resist and vitality and found the pants listing for 2m down to 200k. So I listed my pants for a measly 150,000 and they aren't even selling. The problem is you can't see who is buying and what they are buying for. The auction house is missing eBays most useful feature: show completed listings only. Even when you see a "Sold" you can't see for how much! Its so frustrating. Even if you list your items in accordance with everyone else, it doesn't mean anyone is buying it.
If you have the listing sorted by buyout then when you see a SOLD entry you can guestimate the price according to where its located ( so if the sold is between a 200k and 250k you can tell its price was between 200-250k )
Anyways try to put a +vitality gem and the other prime stat gem in the pants you will have a much better chance selling them that way. ( people usualy look for 100+ stats )
What if 0 of the listings are sold >_<? Does that mean each pair of pants is over priced?
I think you just answered your own question there. Although I do wonder how long it takes for the sold items to get pruned from the listings.
Anywho I was wondering that same thing RE: Gemming and showing up in listings, good to see that others had noticed that phenomena too, FAQ updated.

If it's int prime stat, I'd pay 100k for it. It's a minor upgrade for me, but I'm at the point where I need to either make small purchases, or save up for something that isn't deflating rapidly in value. If you're going to relist it, I recommend sticking a square topaz and ruby in it first. It'll show up on my 100 int and 100 int/100 vit searches.
I flip pants with similar stats like pancakes even with no sockets. Are you sure about those stats? 150k for those pair of pants is a bargain.
I just sold pants with these stats for 300k b/o.
main stat 121
vit 73
all resist 47
no sockets
Edit: msde is right on the money. Most people filter above 100 main stat. I know I do.
