I was wondering if swapping in gear with more attack speed % is worth losing a little bit of Dexterity and vitality for?
Any day of the week. More spirit gen is always nice and later you will rely more and more on life per hit to be able to stay toe to toe with the big guys. Especially since monks don't rely on the big spenders anyways since most of our skill slots will have passives in inferno.
I got up past 2.5 attacks per second now but im at around 13k HP.. is that bad?
Well im 44k hp 700 all resists 9k armr with buff and 20k dps! i still get 1 shotted so enjoy

By what? My stats are less than yours generally (30k life, ~500@ and 6-9K armor buffed and depnding on if I'm using Keen eye on Deadly Reach) and I progressed through almost all of act2 inferno (aside from Belial) last night withonly a few deaths from champs/elites, and a fair number would be avoided if I had LoH on my weapon or If I paid a bit more attention to the 5 descrator pools under my Monk :P
Disregard the above if your progressing through A3/4, I've yet to experience those yet and with the stats above I'd hope you would be.
@devil - over 2 without sacrificing too much is ideal imo. Having a 1.3-1.5 dps weapon, 2 70dex/15ias rings (can be vendored for, or AH'd if you don't want to remake games looking for them) and a half decent IAS glove will see you through there. With FoT you will be interrupting faster than the mobs in front of you can attack and mobs doing no dps is about the best mitigation you can get.
The highest you can get to. I think if you leave the zone and come back it resets their inventory as well.
