I looked through the guides and they suggested Holy Freeze, but would a defiance merc for a Meteorb Sorc with mediocre gear hold up longer against bosses?
I assume your merc would die pretty fast no matter what you choose.
Until you manage to equip him with good gear.

HF doesn't work against them, so ye, Defiance would be a little better. Your best option would be to slow bosses down so equip him with Woestave or Kelpie Snare if you've got one of those lying around.
Defiance all the way. Holy freeze is crap.
If you don't have the weapons hubb listed you could also use a blackhorn's face death mask. That is easily obtainable and has the slow feature as well. Holy Freeze is great for area clearing but useless for bosses, and defiance is not that useful for area clears because in normal situations with holy freeze you'll be able to knock them down before they get close. Really depends on how much you do of each, and if you really think you can't gear your merc up with something more substantial, even a merc with a decent insight pole and tal's mask should be able to hold his own for at least a short time.
Holy freeze is delightful for dealing with mobs (unless it is a mob of stuff with 0 chill effectiveness like stygian dolls or frenzytaurs), which are more dangerous than bosses, usually.
Well since this is the Sorceress section I'm going have to go with Holy Freeze in most cases. Being able to slow down most of the masses outweighs the extra defense for me. I rarely get hit anyway and the bosses don't pose much of a problem so slowing down the many minions while I obliterate their sorry butts is a nice way to go.
I agree with the posters above - HF is much more useful in general area clearing and definitely not worth losing for a bit of an edge against bosses. If you don't have a way to slow Meph he can be a real pain for a poorly geared sorc - you'll have to either use the moat trick or just keep teleporting around. Another sometimes-useful trick is to cast a couple of Meteors in front of where he spawns without waking him up, then teleport there and he'll rush up to where the Meteors are falling.
Just to clarify, Holy Freeze does not apply to Act bosses (Andariel, Duriel, Mephisto, Diablo and Baal, and their alter egos); it still applies to random Champion and Unique, Super Unique and boss monsters (Blood Raven, Griswold, Radament, Summoner, Izual, Putrid Defilers and Nihlathak) as long as they don't have 0 chill effectiveness.
