Is this a good or a bad idea for MF hammerdins?

If I can somehow manage to get a better torch my resistances will be maxed (even with no Um rune in HoZ) so this leaves 1 free socket, would it be better to put an ist rune in it?

As long as you don't loose anything else by doing it, more mf is usually worth it in the long run. However, it might be a better idea to increase amount of kills over time by hitting 125 fcr instead of using HoZ. Especially if you already have >250 mf. Killing and moving faster will pay off more than a few bits extra mf once you have some basic amount of it.
That given, if you still want to stay with HoZ, it sure is worth it. What was not worth it from the start is the um in it, as you clearly don't need that much res and a perfect diamond gives only 3% allres less. Another good and extremely cheap option is an eld-rune, reducing amount of dex needed for maxblock. Even with holy shield, this might shave off a statpoint or two that can go into vit, at least unless you have perfect stats on all your dex-giving gear.

I'm currently evaluating a pure lightning sorc w/ infinity, so my p-spirit monarch is better spend there. Besides, if I take part with HoZ, and switch is with p-spirit, my resistances will be absolutely bad.

Paladins don't use Spirit *Monarchs*.

if for MF only, think you should use a 40-45 all base res paladin elite shield, and add 4 Ist runes on it

That's a bit extreme, I just went with Ist in HoZ, because all resists are already maxed.
