I ask myself what happens if I eat 10kg of the most healthy food imaginable every day .

The dose is what makes the poison. You can die from water poisoning as well or a 12x1 litre case of Coke may fall on you and crush your neck.

The issue isn't a matter of dumb regulations, but probably about the way lawyers earn money. Even the most absurd claims have a chance of leading to some arrangement which involves a nice income.
