So, I'm a returning Diablo veteran from a five year break and I keep see people referring to 'trist.' What is that? Is that Tristram?

trist = Tristram, most likely they are refering to the new(well, to you) end game event, uber tristem. Basically you get keys from the countess, summoner and nilly, then create a portal to one of threee demons... they drop one organ and by combining those three you can open a portal to uber tristem. There you fight level 110 versions of the threee prime evils and when they are dead you get 1 reward, a unique charm. So basically you have to turn 9 keys into one random class specific charm.

"Trist" may also refer to "Tristram Runs", that is a good way to level from 1 to ~15 by repeatedly cleaning Tristram (the burning village where you rescue Cain) in an 8-players game. Usually, such games have names like "Trist-run-001", "Tristy-002" or "<some_prefix>_Trist_003", in Normal difficulty only of course.
Remember the Wirt's leg and portal tome in cube for cows.
Now we have Tristrum,
Key of terror, hate and destruction in a cube for tristrum. they drop from the Countess, Summoner (arcane) and Nihlathak.
Baals eye, Diablos horn and Meph brain drop in there and in a cube open up uber tristrum.
reward is one of the 2 best charms in the game.
