Go to the trade forum, look up the trading values, and only the green items with value are worth keeping.
Also, keep I find it very convenient to keep full Sigon's, Hsaur's boots, and Death's sash.
They are very good items for twinked play.
Noodle has Matriarched / Patriached characters using the full Immortal Kings', Mavina's Caster, and Tal Rasha's Wrappings sets. Noodle reports through a trusted source (Noodle) that the IK set is effective, Mavina's is competent for a FA / strafe build (although there are certainly faster killers), and Tal's set is excellent for a Blizzsorc. Noodle retains Tal's Masks for mercenaries due to life leach, and Guillaume's Face (oh, heaven's, Noodle broke a cherished forum tradition and spelled "Guillaume's" correctly!), for the Crushing Blow.

Griswold's set is quite nice on Avengers, Aldur's works with a Wind Druid and I've heard of those Patting Necromancers with the Trang's set. Basically all of the class specific sets are useful.
Some specific items to keep would be Laying of Hands (FR, IAS), Najs Puzzler is helpful for the teleport charges but not worth anything for trade and Whitstans Guard is a nice blocking shield.
Noodle thanks Mursilis for reminding Noodle that he has a level 50 poisonmancer named Pookie, currently working his way through NM Act 3 who will eventually be wowing the natives in his stylish full Trang's set.
