What does X/X/X mean when people are talking about gear? Of course, the X's are usually replaced with numbers, but what do they mean? Resistance? Magic Find? Enhanced Defense?

A/S/L....

kidding!

it depends on what type of item they are talking about. For example,

annihilus charm has 3 important stats barring the +1 to skills: stats, +to resists, and +%extra exp gained.

Sharp Small Charms of Vita are common to have the abbreviation as well:

3/20/20: +max damage/+AR/+life

Depends on the item. It's what values the major variables on the item have. If you look at Arreat Summit's section about uniques, you can generally figure out what stats they're talking about on each item.

As been said: variable stats, most often in the order they are listed on the item.
