How much difference in damage is there on normal targets and broken light immunes between a Griffon with -25/xx an a -24/xx? The 1% difference shouldn't be noticable right?

Nope, it shouldn't. The highest resistance a monster can have without it turning into an immunity is 99%. Even if it has that much, -24% griffon's will lower the resistance to 75%, while -25% will lower to 74%. So, with a 24% griffon, you deal 100%-75%=25% damage, with a 25% one, you deal 100%-74%=26% damage.
Let's do a relative comparison:
25/26=0,96. This means you deal 4% less damage with a 24% one. 4%. Against a monster with inherent 99% resist and no other sources of -res% (Lower Resist curse, Conviction aura, Light Facets). Against monsters with less innate resistance, the difference is even smaller.
For some people, owning a 25/20 griffon's is just a matter of perfection, really.
