If i have two items '.. of thawing ' each giving 50% immunity to freezing am i then 100% immune to freezing thus immune to the effect all together?

No, the percentages won't stack.

Nope. Those two don't stack. You have to get an item with "Cannot be Frozen" for that. Note that holy freeze isn't the same as cold which means nothing can stop it.
