Low Dmg infinity for light sorcy?

What is more prefferable?

low dmg infinity to avoid iron maiden problems
or high dmg?

Personally i prefer high damage infinity.
First of all the resale value will be higher then one with no damage and also there will be some monsters which infinity can't break.
Having a high damage infinity will allow your mercenary to kill these monsters

Btw. what merc do you suggest? Holy freeze or might?

Depends, personally i always prefer the holy freeze merc since it allows for crowd control. Yes the might aura will increase the damage of infinity by quite a lot, but you have no gain with might on your sorc whereas with holy freeze it will provide greater life expectancy for your hireling and yourself.
Also holyfreeze can slow immune to cold which is imba
