I'm just wondering how the defence affects on my character. I guess that with the higher defence I get less damage on a hit, but how it is calculated?

I'm planning on creating a dream helm, but can't find a superior bone visage for it. Should I keep looking or ignore the enchanded defence attribute and create it on a plain bone visage helm? The same problem is with a mage plate where there is a great difference in defence.

Nope - defence does not lower damage taken. That is strictly Physical Damage Reduction, whether direct or percentile. Defence lowers the chance that something will land a successful melee attack on you (magic not included).

Here's my general rule: No Shout, no Holy Shield, not a Bear? Superior isn't needed at all, and is a hassle to repair as you have to constantly pick up/sell or keep a supply of Ort/Ral runes.
