You really need to put more details if you're going to ask such a vague question.
If you're pk, and have nice gear, I'd recommend max block. Sorcs gain little hp compared to the other classes per vit so even with max block you will only lose around 400-500 life for a 75% immunity to melee, arrows, etc. If you are mostly mf, I'd say go vit. I don't think you'll be hugging meph enough for block to kick in much.
