Well unique, rare and set items cannot be socketed in the cube, you have to use Larzuk for that and he will give only one socket.

According to this site there is a recipe for socketing magical items.
3 Flawless gems + magical item = socketed magical item.
I've never used it so no idea how many sockets you get, probably 1-2. That's the same possiblities if using Larzuk, he will give 1 or 2 sockets to magical items.

Grey/white items definitely can be socketed with the cube and they get a random amount of sockets up to their maximum level.

The 3 flawless gem recipe will give new magical mods to the item, so be careful when using it.

For _adding_ sockets to an existing item magic or up you have to use Larzuk quest (provided there are no sox already on it, if that is the case you can't do anything).

edit: Hmm didn't think about Jiansons suggestion, for most people the value put on sox q versus soj is the other way around though

Rares can, but it will cost you 3 perfect skulls and a Stone of Jordan.
(really only useful for us who never twink, because a socket reward is valued higher than an SoJ for some characters. Iīve used it once (for a 1.09 curses-only necro, in his rogue mercīs rare Circlet))

I was ignoring the SOJ recipe as it's rather ridiculous. To use an SOJ to socket a random rare is pretty much a massive waste of such a hard to find item.

Granted on the Realms they are duped so it doesn't matter but in Single Player almost no one would ever do this.
