If I imbue something that has staff mods, such as a assassin claw, will the staff mods stay the same or will they be rerolled with the rest of the item?

They will be rerolled.
BTW, imbuing has special rules (bonuses) regarding the probabilities for how many staffmods youŽll get, and how high +skills youŽll get.

Special bonuses? Hmm interesting, although I'm bumed out that I can't take all the +3 LS claws that I have and try imbuing them for my dream claw. Guess I'll just have to start picking up every greater talons/runic that I see in hopes of imbuing them.
Of course I'll first have to get the imbue quest for everyone of my characters as I've always skipped over those.

There is a detailed explanation of how staffmods, including assassin claw mods, are generated in this item alteration guide thread (http://forums.diabloii.net/showthread.php?t=473052) by Uzziah.
