I'm a ww dual wielder myself and i love it. I use a ebotd cb and a grief cb as my two weapons. With my fort and only 1 point in IS and 1 point in shout my def is 19k so i don't miss having a shield at all and the damage i do is tremendous!
Dual wield would be nice for PvM... I doubt there will be many instances where you'll die because you've put away your shield.
I think you'll definitely notice the different in killing speeds.

Dual Wield
more damage, chances to hit, and leeching
Shield
more defense, chance to block, and more resistances
Shields on barbs are mainly for melee pvp where you can take lots of damage with a single blow. Wearing a shield is helpful to prevent an attack and therefore, take no damage. For pvm, you mostly take lots of little damage to where you are not so worried about dying in a single hit. By dual wielding, you can do more damage and kill things faster. Any damage that you do take as a result by not wearing a shield can be made up by the more leeching you do with 2 weapons. Basically for pvm, shields are a safer route to go but at the cost of less killing speed.
For pvm, botd is the weapon to go because of the nice damage, tons of leech, and no repair costs. Botd + beast would be a good route to go.
This is easy.
Softcore + DualWeld = Fun
HardCore + DualWeld = Death
HardCore + S/SS = Chance to live past NM
