I just made another thread about which pally to use since im new and i decided on a frost zealot. Now im not sure how to go about doing stats, i was thinking going 3 str 2 dex next level 5 vit then again 3 str 2 dex, etc. Is that a good plan?

I'd suggest that you get an idea of how much of each stat you're going to want by end-game before you start allocation. for plain PvM you don't need to micro-manage your stats to squeeze out every point of HP. In terms of strength, shoot for something like 150 if you don't plan on having really great gear. That's about as much as it would take to wear a stormshield, which is a great piece of gear and relatively affordable. As for dex, somewhere around 100 should be good. It's hard to nail this one down until you know how much holy-shield you'll have and what shield you're wearing. the good news is that points in dex are never wasted when you're a zealot - Attack Rating is king. After this, you can pump everything into vitality, but considering that these numbers are approximations i'd keep 20-50 points undistributed so you have some flexibility in your gear choices. Once you have a decend end-game setup feel free to put them where you like/need.
