every fricken time I ever click an xp shrine I almost immediately get cursed and the effect is cancelled. So I doubt I'll ever know.

What do you mean? If you mean whether or not the EXP Shrine will increase your share of the exp in a party, then yes. It also will not reduce the amount of exp the other party members receive.

So while doing cow runs for example it would make sense to search for an XP shrine while someone else is getting the leg ?

Cows are the best exp from level 20-24, between tomb runs and the ancients. I usually go all the way to 26, since exp is fast.

As for the OP, yes it is worthwhile finding an exp shrine while the leg is being fetched, just don't take too long. If you miss half the cow level finding an exp shrine, then you lose more than you gain.

Edit: Oh and, chaos and baal runs have a much higher chance of you getting cursed and losing the shrine. Your chances of losing it in the cow level are minimal.

I'm quite sure that only you will benefit from the XP shrine, which will affect XP from your own kills and from party kills. The Ancients quest reward doesn't get enhanced, of course.
