For a fire sorc how many stat points should be in energy?? And should I max out warmth??

Assuming you're going for a non-Energy Shield build, no points should be spent into energy. None at all.
As for Warmth, one point is enough. +skills will boost it to decent levels.

I usually put 2 per level cauz I keep missing mana! if I put none wont I just constantly need pots? I'm using fireball, meteor, teleport, shiver armor

yea, same with me..i can understand maybe pvp you want life, but when your fighting..like baal and stuff you can run out of mana easily.. and usually your not getting hit..but eh i unno higher levels yeah you dont need it, so i guess just for the best char late in the game..you shouldnt put any into energy.
I found this hard to believe too; a mana based char not putting any points in mana?
But as soon as you get frostburns (or whatever fire sorcs wear) and some decent gear, the mana steal, recharge and warmth starts racking up and the points are better spent elsewhere.
It does make the first few levels pot intensive, but it pays off in the long run.

@ all previous posters: Insight has rendered points in energy irrelevent and pointless. Many items come with +mana and mana charms are relatively easy to get. The points you dump in energy may seem like a good idea now, but you'll regret it in the long run.

I dont know how true that is, I have 1350 mana and with mana shield on the only time I get in trouble in durance is when my mana bar starts dropping faster than I kill stuff, but I have enough where I can usually finish off stuff before its a big problem.
My build is Ice (43 ice skills modified), rest in fire, lvl 78
However I have left 150 stat points unspent because I'm not sure how I want to spend them.

I'm with Evrae Altana on this. If you're on ladder, Insight will solve all your mana problems. Even if you don't use Insight for whatever reasons, a pair of Frostburns will give you enough mana to spam spells happily without relying too much on mana pots. For the rich, 2x SoJs can replace the Frostburns for even more mana.
At the early clvls, it will be annoying. But when you get to the high 70s or 80s, you will have plenty of mana just from levelling up, and with equip that doubles that, mana is not an issue. Do expect to use mana pots now and again, but that is much preferable if you get to dump those saved stats into vitality. Better an empty blue bulb than an empty red one.
It could be different if you go the ES route though.
i usually pump energy to a base of 50 early in the game. then the rest are into Vit, and strength to wear the sooo tempting spirit shield... that is also the main reason why i never had a max block sorc... :evil:
anyways, i recommend if u are just starting, have no gear, getting a base of 50 would help u early in game... you wont really regrete later in game... constant fire ball plus tele CAN drain lots of mana even with insight merc.. especially for the poor geared starter sorc :D
