What is Crushing blow, deadly strike, and open wounds?

I see this everywhere (battlenet included) but for the life of me, I just can't find a clear description for the three of these. I'm planning on putting the runeword Steel (+50% for deadly strike) or Strength (+25% crushing blow) on a weapon of mine, and I'm not sure what is the better choice (I'm a PvM Fury werewolf).

Deadly strike = chance to double damage
Crushing blow = chance to reduce enemy current hp by some percent (depends on whether you are melee or ranged, and whether it is a boss or not)
Open wound = chance to make enemy bleed (works like irresistable poison)

So would the stength runeword and its +25% crushing blow be the better choice for me (I'm melee, speed>power)?

why the strength runeword? Gore Riders provides Crushing Blow, thats enough even if it is a small percent, since it also gives deadly blow and open wound.

I don't know what a Gorerider goes for, cost wise.

Check the Trade Value forums. But I don't think it should be that expensive, especially for a low one.
