I've managed to stockpile rather nice amount of gold and I'm now looking for gamble some tradeables but as I've heard you can gamble items plus/minus 5 of your character level. So the question is which items should I gamble and which level character should I use?

Your odds of getting any unique or set item via gambling are really really really low.
That said, use your highest level character.
You might try rings for an SOJ to start.
But the truth is if you gamble for uniques, you might end up wasting all your gold.

But if I'll use my highest level char for gambling rings would I have chance to get soj? It's itemlevel is quite low. Or doesn't that -+5 lvl apply on rings?

When gambling, the ilvl is a random value from charlvl-5 to charlvl+4.
A SoJ has a qlvl of 39, so you need a L44 character to have a chance for any gambled ring to become one. However, you might want to cancel out rings with a higher qlvl. The next ones are Dwarf Star and Ravenfrost with qlvls of 53. That means if your character is L49 or higher, he can get these rings as well, so he should be of a lower level.
If that L44-48 character gambles, 1 in 2000 rings will be unique, being Manald Heal with a 15 in 31 chance, a Nagelring with a chance of 15 in 31 or a SoJ with a 1 in 31 chance. That means, 1 in 62,000 rings gambled by a L44-48 character will be a SoJ. A L44-48 character cannot wear Gheed's Fortune, but he/she can wear an Edge bow which reduces prices by 15%, i.e. it costs 42,500 gold per try, so after spending an average of 62,000*42,500 = 2.635 billion gold, you have one SoJ (or no SoJ if you are unlucky !), 15 Nagelrings (1-2 might be 29 or 30% ones) and hey, 15 Manald Heals as well :thumbsup: Good luck !
It's better to gamble for good rares, but in that case gamble for amulets or circlets instead. If you want a self-found SoJ and nothing else, visit nm Andariel instead, but IMO it's better to MF Hell Meph, sell the finds for runes and gems and buy a SoJ from that.

I generally gameble amulets for +3, they make exellent twinking and sometimes endgame ammys.
