I usually do 77 for dusk coh, unless i'm going for max block. Then i would have 156 base strength for storm shield, and about 200 something dex other then +dex from waterwalks and +dex from other sources.
I tend to keep stat points left unspent so that if I find an item I want/need to use, I can allocate the points I need to use it.

Depends, stromshield needs 156 IIRC (I hate stormdshield, but thats OT) this is also needed for a Spirit Runeword shield (+2 Skills, FCR, Mana, Resists... drool).
If you arn't hardcore I'd pump it up to 103 so you can wear Archon Plate (for Enigma or CoH, though there are lighter armors I like the look of light plate armor on a sorc). Also this will give you a great deal of freedom picking equipment.
If you don't plan on blocking and are playing softcore It's probably safe to pump it to around 100. Most of my sorcs end up there, possibly a bit higher. I don't like using charms so Vit points are relatively valuble to me.
I don't go for blocking (and honestly half my sorcs end up with 100 stat points or more left unallocated) and I end up with this:
STR 120, DEX Base, VIT Remining, NRG base, And about 50 to 100 unallocated at clvl 80. The points should go into Vit.
Now you do have some other dex options: 75 for wizardspike and 200+ for 75% blocking. I favor base, I play softcore so I like my glass cannons. High Vit+High Res make me durable enough.

IMO there's no point whatsoever to save stat points unless you hadn't planned your char yet, in which case you should go plan it before you keep playing. Saving stat points so u can later put in str if u need them is almost exactly the same as actually spending them in str. If you know you'll never need that str just use them somewhere else. If you don't know you'll either end up saving them forever or wasting them in STR so u end up the same - nothing gained from saving them.
If you play online I suppose you need the str for the best possible available item. If you're playing offline, though, you may manage with less if the best possible item is nearly impossible to achieve offline.

Spirit for "t3h" win. 156 minus +str from Tal's.
