I'm just wondering.. can meph drop griffons?

No, he can't. Meph has a high enough monster level to meet the qlvls of any unique, but he can drop up to TC78 only and diadems are TC87.

You should download Doc Tenshi's ATMA which has a wonderful drop calculator. You can configure a search for item or by monster and find out who can drop what and what are the odds/rarity.
