I'm far from being an expert and sorry if this is a dumb question but can i get a grey 2 open socket druid helm with +2 to druid spells or +3 to summon spells or will it have to be magic?

AFAIK they have to be magical or rare. I'm quite sure that nonmagical ones can only have bonuses to single spells.

In general, +class skills and +skill tab are magical mods.

There are exceptions to the rule, though --- Bows and Javelins get +3 skilltabs on them, but that's the only exception. Druid helmets, Necro wands/shields, Sorc orbs/staffs, Barb helmets, assassin claws and paladin weapons only get +individual skills as non-magic mods.
