here's how lf works.
1. you run up to PACK of monsters
2. you throw stick.
3. stick hits 'monster'
3a. stick splits into 'x' number of bolts (x based on slvl of lf)
4. original physical stick passes through first 'monster' and hits second
4a. stick '2' splits releasing 'x' number of bolts
5. YET AGAIN stick pierces monster, and finds the next baddie
5a. stick splits into 'x' number of bolts
get it?

Each time the original thrown lightning bolt from the lightning fury hits a target, it releases the lightning bolts. So if you have the lf skill up to a respectable level, that's a number of bolts released. Let's say it releases 25 bolts per hit.
If the original bolt pierces the 1st target, and hits the one behind it, it releases 25 again, 3rd hit means another 25, 4th hit another 25 bolts released.
If your piercing% is 50%, you'd have 50% to hit 2 targets, 50% * 50% = 25% chance to hit 3 targets, and 12.5% chance to hit all 4 targets
if however the piercing% is 80%, that's 80 % chance to hit 2 targets, 64% chance to hit 3 targets, and 51.2% chance to hit all 4 of them.
So in raising your piercing% with 60%, you get more than 300% extra damage, and will also have an easier time leeching enough mana to keep using lightning fury (since you'll be hitting more monsters each throw).
